Protein fuelled, low fat lunch wrap with tuna, avocado and Quark - Recipe




A super proteined lunch for sustainable energy.
Even better news, it is very low fat.

My lean version of tuna mayo used to be mixing tuna and cream-cheese.
Thankfully, now that Quark is available on most super-market shelves, this is the ultimate in low fat lunch ;-)
Quark is virtually fat-free and as tasty and creamy as cream-cheese !


Here is my recipe


Preparation time: 10 mins
Cooking time : 1 min
Quantities : for 2 wraps

What do I need ?

- 2 tortilla wraps
- 1 small can of tuna in brine (200g)
- 1 avocado pear
- 1/2 lemon
- 1 shallot (optional)
- 3 to 4 tbsp The Lake District Company plain Quark
- 1tsp Dijon mustard
- A large pinch of cayenne pepper
- Salt

What do I do?





1. Start by draining the tuna : Open the can and tip the tuna in a small mesh colander placed over the
sink or a container. This step is important to avoid a "soggy" tuna sandwich












2. If you are using the shallot, peel the shallot and cut it in half lengthwise
3. Chop the shallot as fine as you can and place it in a salad bowl









4. Add the tuna, Quark, mustard and a generous pinch of cayenne pepper and salt
5. Mix everything well with a fork









6. Half, peel and chop the avocado
7. Pour some lemon juice over the avocado slices/chunks











8. Heat the tortilla bread in a dry pan or in the microwave for about 30 seconds









9. Spread the tuna mixture over the bread, leaving about 1 cm edge all round
10. Place the avocado chunks on top of the tuna








11. Fold the tortilla wraps as shown in the picture











12. Fold the bottom of the wraps and close












13. Cut in halves and enjoy !
